Anyone know how to fix the spacing on here?? I'm so frustrated, it's not posting the way that I'm composing it and when I got back and edit it, it doesn't save it, but puts the huge spaces right back in where I have anything bulleted....errrr!...see my post below...it looks HUGE!

15 Months..and 9 Days!
I just can't believe how quickly the time goes by! The hubs and I celebrated our 4th Wedding anniversary yesterday...already??!!!...and our little Sweet Pea is now just over 15 months old! He's the sweetest little guy ever! He LOVES to be outside, he loves the park and feeding the ducks and squirrels and riding on the train there! He also loves to play at his sand/water table...he just loves to be outside, period!...bring in the water hose and that's even better! Sweet Pea is also starting to really love his books, we read before each nap and bedtime and sometimes in between those times as well!
Sweet Pea is getting quicker on his feet, we follow him all around the house, all day long (when we're not out and about, of course!) He loves to help! He's been helping me unload the "safe" things from the dishwasher, he will hand me the laundry to put in the washing machine and then help me put it in the dryer! This week, he has started wanting to throw away his diapers! Grandbunny got him his very own broom and dust pan because he was loving our big broom so much!
Our little man is saying so many things right now...and starting to try to repeat lots too! Here are some of his words...

We were in my family's store the other day and someone asked me how old he was and before I could respond, my little man says "I one!" holding up the number one on his hand! Oh my, I had no idea he could do that! He just amazes us more and more each day! I am so proud to be his mommy and I love him "..all the way to the moon and back!"

Healthy Chocolate Chip Cookies!
Sweet Pea and I decided to bake some cookies today! Healthy Chocolate Chip Cookies! Mmmm...He loves to help me in the kitchen and is actually pretty good all things considered! Here's our recipe!
1/4 Cup Butter, softened
1/2 Cup packed brown sugar
1/3 Cup sugar
1 tsp. cinnamon
1/2 tsp baking soda
1/8 tsp salt
1 egg
1tsp vanilla
3/4 cup flour
3/4 cup oatmeal
1/4 cup flax seed meal
1/4 cup wheat germ
1/2 cup or so of mini chocolate chips
Mix the butter and both of the sugars in a bowl. Add the cinnamon, baking soda and salt, mix some more. Beat in the egg and vanilla. Add the flour and beat. Next, stir in the oatmeal, flax seed meal, wheat germ and chocolate chips.
Drop by the spoon full onto a cookie sheet and bake for about 9-10 minuets in a preheated, 350 degree oven.
So yummy and kind of healthy too! Enjoy

1st Trip to the Beach!

Happy Birthday!

Mexican Chicken Casserole....
It's been FOREVER since I've posted a new recipe, so here ya go! I made this the other night and it was very easy, healthy and yummy! 2 Cups cooked brown rice 1 lb cooked chicken, diced up 1 Can diced tomatoes 1 Can stewed tomatoes 1 Can black beans, rinsed and drained 1/2 bag frozen corn 1 bell pepper diced 1 red pepper diced (about a cup of each pepper) 1 Tbsp. cumin 1 tsp chili powder 1/4 tsp. pepper 1 tsp. garlic powder 2 Cups mexican blended cheese Put the brown rice on the bottom of a large casserole dish. Combine all the rest of the ingredients...not the cheese though! Pour mixture over the rice and bake at 375 for 30 minutes, covered Take it out of the oven and top with the cheese and bake for about 15 more minutes or until the cheese is melted and bubbling. So good and so easy and we had leftovers!!!! Yea!!!!

A trip to the park and 11 MoNtHs...
We are now one month away from out big BiRtHdAy!!! I just can't believe how fast this last year is going by! We took Sweet Pea to the park for the first time on Friday! We fed the ducks and rode the train! He wasn't too sure about the geese!!

Sweet Pea is all over the place right now! He's pulling up on everything, helping mommy "organize" the cabinets and he will even walk some while holding on to hands and furniture!
He is 22.12 pounds and still LOVING all kinds of foods! He is enjoying swinging and playing bubbles! He can say mama, dada and bye, bye! So cute!!! He loves to wave, clap and turn the lights off! He is just doing so much!!!!!
