Hash Brown N' Egg Bake

I made this a few weeks back one Sunday morning and it was sooo good that I had to share! You can make it the night before and bake it in the morning too!
Hash brown N' Egg Bake
1/2 cup butter
1 (16oz) package frozen hash browns
1 cup cheddar cheese, grated
2 cups Swiss cheese, grated
2 cups diced ham
4-5 eggs
1 cup of milk
chopped onion to taste
garlic powder to taste
Meld the butter in a 13x9 pan and add the hash browns. Bake at 425 for 30 minutes. Combine the rest of the ingredients and pour over browned hash browns. Bake at 350 degrees for 30 minutes. (I made it the night before and browned the hash browns, add the egg mixture once the hash browns are cooled, cover and place in the refrigerator over night. Bake the next morning.)

Banana Poppy-Seed Muffins

I get so sick of cereal in the mornings and I always seem to forget about our bananas and before I know it, they are way over ripe! So....I don't throw them out, I make yummy muffins!


Preheat your oven to 400 degrees
Mash 2 very ripe bananas.
In a large bowl....
Mix together: 1 egg
1/2 C sugar
1/4 C vegetable oil
Add and Mix: 1/2 C milk
2 teaspoons of poppy seeds
the mashed banana
In a small bowl mix together the following...
1 1/2 C flour
2 teaspoons of baking powder
1/2 teaspoon salt
1/4 teaspoon of baking soda
Add the flour mixture all at once to the liquid mixture. Stir just until the dry ingredients are moistened. (The batter should look lumpy.)
Pour the batter into a 12 cup cupcake tin that has been greased or sprayed with "Pam."
Bake for about 20 minutes or until a toothpick inserted comes out clean!


What's for breakfast??? Muffins and some fresh fruit!...and so easy! yummmyyyy!

Wholegrain Jam Squares

I have friends from time to time ask me for some of the recipes that I make regularly...usually what they see me eating for leftovers at lunch! Today I was asked for this recipe, so I thought I might start posting a recipe here and there, every so often...so here we go! This is my mom's recipe, she used to make these for use when we were little! (She is the BEST cook, the things that the bakes/cooks are always so yummy!!!!) These are yummy for a quick breakfast or a snack!

Wholegrain Jam Squares:

2 cups uncooked quick oats (oatmeal)
1 3/4 cups flour
1 Cup butter or margarine
1 Cup firmly packed brown sugar
1 teaspoon cinnamon
1/2 teaspoon baking soda
3/4 Cup jam (I like strawberry, but you can use any kind. I also just use a whole small sized jar.)


Combine all ingredients except the jam in a large bowl. Beat at low speed until mixture is crumbly.

Reserve 2 cups of the mixture and press the remaining onto the bottom of a greased 13x9 pan. Spread jam evenly onto the base. Sprinkle with reserved mixture.

Bake in a preheated 400 oven for 25-30 minutes or until just golden brown.

Cool then cut into squares and enjoy! :-)
