Healthy Chocolate Chip Cookies!

Sweet Pea and I decided to bake some cookies today! Healthy Chocolate Chip Cookies! Mmmm...He loves to help me in the kitchen and is actually pretty good all things considered! Here's our recipe!



1/4 Cup Butter, softened


1/2 Cup packed brown sugar

1/3 Cup sugar


1 tsp. cinnamon

1/2 tsp baking soda

1/8 tsp salt

1 egg

1tsp vanilla

3/4 cup flour

3/4 cup oatmeal

1/4 cup flax seed meal

1/4 cup wheat germ

1/2 cup or so of mini chocolate chips



Mix the butter and both of the sugars in a bowl. Add the cinnamon, baking soda and salt, mix some more. Beat in the egg and vanilla. Add the flour and beat. Next, stir in the oatmeal, flax seed meal, wheat germ and chocolate chips.


Drop by the spoon full onto a cookie sheet and bake for about 9-10 minuets in a preheated, 350 degree oven.


So yummy and kind of healthy too! Enjoy

Chocolate Kahlua Cake....


No...these are not the Kahlua cake, these are obviously the cookies I baked for Christmas.....mmmm....just had to include a picture! :-)
Here is the Chocolate Kahlua Cake! I originally got this recipe from my friend Lois at one of my bridal showers and I LOVE this cake! It is really moist and is so good fab with a dollop of cool whip or whipped cream on top of it! I normally dust the top of it with some powdered sugar before cutting.
Here is the recipe!

1 Chocolate cake mix
4 Eggs
1 pt. sour cream
1/3 c Kahlua
1 small package of instant chocolate pudding mix
3/4 cup oil
1 cup chocolate chips
Mix all ingredients in a large bowl. Carefully add the chips last, folding in. Grease and flour a bundt pan and bake in a preheated oven at 350 degrees for about 45-50 minutes. This cake is oh so yummy!!!!!

Nieman Marcus Cake

I needed something sweet the other night, so I baked this yummy Nieman Marus cake. This cake is so easy to make and it doesn't take long either. It's really more bar like than an actual cake. Here is the recipe!


1 Box yellow cake mix
4 eggs. divided
1/2 C butter
8 oz. package of cream cheese
2 C powder sugar

Preheat oven to 350 degrees and grease a 13x9 pan.
Mix the cake mix, two of the eggs and mutter. Mix well, the batter will be very thick/stiff!

Combine cream cheese, powder sugar and the remaining two eggs. Mix well and pour over cake batter.

Bake for 35 minutes or until a toothpick inserted comes out clean!
Cool completely and cut into squares and enjoy!

"Healthy" Brownies??!!


Well, probably not so much, but when one of the ingredients is zucchini, we can at least pretend that they are healthy, right??!! I LOVE Southern Living and I came across this recipe for Zucchini Brownies and I had to try it! I found it in their Southern Living: Homestyle Cooking cookbook. (This is my favorite cookbook right now!) Here is their recipe!
3 Cups all purpose flour
1/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
2 cups grated zucchini (I used one large zucchini, about 3/4 pound)
1/2 Cup butter, melted
1 3/4 cups sugar
1 cup vegetable oil
2 large eggs, lightly beaten
1 teaspoon vanilla
2 cups (12 ounces) semisweet chocolate morsels
1/2 Cup walnuts
COMBINE the first 5 ingredients in a bowl, stirring well. Combine zucchini and butter, add to flour mixture, stirring well. Combine sugar and next 3 ingredients; add to zucchini mixture, stirring 2 minutes.
POUR batter into a greased 15x10 inch jellyroll pan; top with chocolate morsels and walnuts. Bake at 350 degrees for about 30 minutes.
(I used a 13x9 pan because I like my brownies a little thicker and I dusted them with some powdered sugar.)

These are SOOO yummy and the zucchini makes them very moist! They were really more cake-like to me than a brownie. (Ya'll like how I tried to make the plate fancy? Ha! The chocolate was too thin, oh well, I tried and it tasted good, so there ya have it!) Oh, and incase you were wondering, you'd never even know that there was zucchini in these delightful little things!

Mmmmmm....

Chocolate-Peanut Butter Marshmallow Bars....mmmmmm

I found this YUMMY recipe on the Kraft Foods website and I had to share it with you! I made them this weekend and I made them recently for our last shrimp boil and they were gone by the end of the night! Here is the recipe....
1 Pkg. devil's food cake mix
1 stick of butter, melted
2/3 cut milk divided
3/4 cup of creamy peanut butter
1 Jar of Jet-Puffed marshmallow creme
1/2 cup salted peanuts
6 squares BAKER's semi-sweet chocolate, coarsely chopped (I have also just used semi-sweet chocolate chips)
Heat your oven to 350 F. Mix dry cake mix, butter and 1/3 cup of milk until blended; press 2/3 onto the bottom of a 13x9- inch pan. Bake 12-14 mins. or until center is almost set; cool for 3 mins. Meanwhile, mix peanut butter and remaining milk.
Spread peanut butter mixture onto crust; top with small spoonfuls of the marshmallow creme and remaining cake mixture. Sprinkle with nuts and chocolate; press gently into cake mixture.
Bake for 18 mins. or just until center is set. Cool before cutting! ....SOOOOO YUMMMY!!!
Tomorrow's agenda includes some homemade zucchini muffins...mmmmmm... I just might have to post that recipe also!

Other than baking and cleaning, I've been doing a whole lot of nothing so far with my time off (I have gone to a few workshops and have a few others to go to in the next few weeks....those are oh so much fun!...not really!)! The pool is my friend during the summer!
