Pizza Roll Ups!

I have always loved to cook...thanks mom! Now that we have our little Sweet Pea, it's sometimes a little harder to get dinner going... Here's an easy, quick and yummy dinner or even party food idea...Pizza Roll Ups!
Here is what you'll need...
  • 1 tube of refrigerated pizza crust dough
  • 1 package of Italian blended cheese
  • 1 package of sliced pepperoni
  • Anything else you normally might like on your pizza also works!
  • 1 Egg white, beaten
  • Marinara sauce for dipping later!
Divide the pizza dough into fourths and roll out...be careful not to roll it out too thin!
Sprinkle with cheese and top with pepperoni or other pizza toppings. Carefully roll up like a log. Tuck and pinch the ends closed. Place on a greased pan (I line my pans with foil for easier clean up!) and brush with the egg white. Poke two holes on the top of each roll to release the steam.
Bake at 400 degrees until golden like this!
Serve with marinara sauce for dipping!
Add a salad and you have dinner!

Wonderful Wednesday

Wednesdays are our busy day...


"Mommy, wow, I'm a big boy now!"
We decided to tryout the Bumbo chair the other day and Sweet Pea sits really well in it! In fact, he really didn't want to get out of it!

We went to Kindermusik yesterday and we had a ton of fun! The theme was water so we focused on how water looks and we played some instruments that made sounds similar to water. Bradley and Cooper liked the scarf water activity. It was supposed to simulate the motion water makes with the ripples in the scarf. Well, Sweet Pea liked it for the most part until his acid reflux started bubbling it's way up.

We also got to play the drums! Sweet Pea really liked getting to tap on the drum...we might be making a homemade drum here one of these days!

Look how big he is! Bradley is two months older than our little Sweet Pea and they are just about the same size! I'm anxious to go to our four month check up to see how much he weighs now and how much he's grown!

Our new favorite place to sit...at our table in the high chair! Sweet Pea has decided that he now prefers to be with us at the dinner table so we set up the space saver high chair last weekend and he's lovin' it!...we highly recomend this chair by the way! It reclines to adjust to his body and how he can sit and hold himself up! It's fabulous!

Baptism Time!

We had our little Sweet Pea Baptised this Sunday!

The Baptism Gown!
This gown is so very special to me and my family as it goes waaaayyyy back. We believe it is at least 100 years old and that it was possibly first worn by my Great grandmother! It was handmade, but we're not sure by who in the family. The detail and handwork in it is just amazing! It's also been worn my by great aunts, my grandfather and all of my cousins, myself and my brother! We are so very thankful what this little Sweet Pea was also able to wear it!

3 YEARS!!!!

3 months ago we were here....that time has gone by fast...


3 YEARS ago we were here....that time has gone by REALLY fast!



It's crazy to think that today we've been husband and wife for 3 years already. It doesn't really seem like it's been that long though.

Easy, Cheesey Dinner!

I actually got this recipe from a friend who I taught with a few years ago. Is it SOOOO easy and quick too! It's a taquito casserole...yum!

Your ingredient list:
Taquitos...bet you couldn't guess that!
2 cans of cream of chicken soup
1 can of rotel
1 package of Mexican style cheese...you can also use just cheddar.
Here's what you do...
Combine the soup and rotel.
Place one layer of taquitos in your greased casserole dish, put half of the soup mixture on top, sprinkle with cheese. Put another layer of taquitos on top of the cheese, put the rest of
the soup mixture on top of the taquitos and top with cheese! Wow...easy, right?!
Bake at 350 for 30 minutes or until it's bubbling.
Dinner is served!

3 Months!

"I love you this much!"
I love these pajamas and sadly we are just about to out grow them, so I had to get a picture of him in them!
We are the big 3 months this week...as of yesterday that is!
At 3 months this little Sweet Pea...
Prefers to be sitting up
Is grasping and showing more interest in toys and other objects
we're starting to laugh...still waiting on that deep baby giggle!
Rolls from side to side, when he can lay down...that darn acid reflux is just terrible on this sweet baby.
We are still not sleeping through the night, again thank you acid reflux! (we are sleeping in longer chunks of time though!)
He LOVES to play in his bouncer and goes to town kicking his legs and swinging his arms!



It's Wednesday, so that means it is Kindermusik day!!! Today, we did some more baby massage and motor skill exercises. We sang a little and played some too! Sweet Pea loved the blanket swing today, it relaxed him so fast and put him to sleep!

After class, we went to lunch with Valerie and Bradley! We went to this neat little cafe downtown and it was yuuuummmy!
