Spinach-Artichoke Dip and a cheese ball


Such a yummy appetizer and snack!!! This recipe makes a lot and everyone seems to really like it! It's easy too!
2 bricks cream cheese, softened
8 oz. sour cream
8 oz Parmesan cheese
1/2 cup mayonnaise
2 packages of frozen spinach
2 cans artichoke hearts, chopped
8 oz mozzarella cheese
Mix the first 4 ingredients until creamy and smooth, add the remaining ingredients (just not the mozzarella!) and mix well. Pour into oven safe dish and bake at 350 degrees for about 20 minutes. Top with cheese. Serve with wheat thins or your favorite crackers!



Snowman Cheese Ball... a really bad picture!

1 8 oz container of cream cheese spread
2 cups shredded cheddar cheese
1/4 cup slivered almonds, toasted
1/4 cup finely chopped fresh chives
1/4 teaspoon ground red pepper
1/4 cup grated Parmesan cheese
peppercorns
baby carrot
Mix the cream cheese, cheddar cheese, chives, almonds and red pepper until well blended. Cover and refrigerate for 1 hour.
Divide mixture into 3 different size balls and coat with Parmesan cheese. Arrange to look like a snowman on a platter. Decorate with the peppercorns and baby carrot. You can also do this as one large cheese ball, if you're not using it during the winter time! I like it best with wheat thins!
